Peanut Butter Popcorn, Garlic Popcorn, Caramel Popcorn balls. Some great recipes for fall and winter popcorn snacks!

These are various different recipes using popcorn from Amish and Mennonite cookbooks.

Peanut Butter Popcorn

12 cups warm, lightly salted popcorn

¼ cup margarine

3 Tbsp. sugar

2 Tbsp peanut butter

1 Tbsp. Karo Syrup

Mix margine, sugar, Karo, and peanut butter. Pour over popcorn and mix. Chocolate chips may also be added.

Popcorn Balls

Popped Corn

1 pkg marshmallows

1 pkg Jello-O mix, any flavor

½ c. margarine

Melt marshmallows, margarine, and Jell-O together. Pour over popcorn. Mix well and shape into balls.

Garlic Popcorn

¼ cup butter + 8-10 large garlic cloves

Thinly slice garlic. On low heat, stir the garlic and butter with a small metal or wooden spoon. Be very attentive, as it burns easily. Brown until the garlic is a nice golden brown. Pop one popper of popcorn. Pour garlic mixture all over the bowl of hot popcorn. Optional: When hot, sprinkle liberally with Parmesan cheese for added goodness.

Low Salt Popcorn

We also just love a salt free popcorn snack by popping on the stove top using our hand crank popper and then sprinkling on Parmesan cheese.

Popcorn Crunch

½ cup melted butter

½ cup honey

1 tsp. cinnamon

3 qt. popped corn

1 cup chopped nuts

Blend butter, honey, and cinnamon. Heat until well blended. Pour over popcorn/nut mixture and mix well. Spread over cookie sheet in thin layer. Bake at 350° for 10-15 minutes or until crisp.

Simple Caramel Popcorn Balls

½ lb caramels, unwrapped

2 qt popped corn

2 Tbsp water

Heat caramels and water in top of double boiler, stirring now and then until melted. Place popped corn in greased bowl and pour caramel mixture over it. Toss to coat. With greased hands, form balls. Wrap balls in plastic wrap.
